Soupy Beef Curry

Ingredients:

  • beef 250g diced
  • 1 onion diced
  • 5 tomatoes diced
  • ginger – julienned
  • tiny closed cup mushrooms – 1 pack
  • hairy beans – sliced to 1″ pieces
  • stock 1 pint
  • coconut milk – half can (6 fl. oz)
  • 2.5 tsp cumin
  • 1.5 tsp ground coriander
  • 1.5 tsp garam masala
  • kecap manis
  • soy sauce
  • salt

Beef marinade -

  • kecap manis
  • soy sauce
  • sugar
  • xiao shing wine
  • sesame oil
  • all spice

Method:

  1. marinate beef for 2 hours +
  2. fry onions and garlic in oil, when starting to become transparent add in beef and all of marinade
  3. when beef is starting to brown add in tomatoes
  4. when tomatoes start to turn soft, add in mushrooms and hairy beans
  5. then pour stock over, stir in generous glug – simmer for 1 hour on medium/low heat
